FROZEN LEMON PIE
This recipe was handed down from my Mother, Sherlene Gundy & is my favorite dessert in all of the world. Her Apple Pie ran a close 2nd, but this has such a light refreshing taste, it's difficult to over state how good this tastes.
Juice and grated rind of one lemon
2 egg yolks
2 egg whites
1/2 cup sugar
1 cup unwhipped cream
Vanilla wafer crumbs
Mix juice and rind of lemon, egg yolks and sugar. Cook until thickened (like the consistency of maple syrup). Let cool. fold in egg whites (stiffly beaten). Fold in egg whites (stiffly beaten). Fold in 1 cup unwhipped cream. Line bottom of refrigerator tray or something similar in size (or double recipe and use a larger pan) with Vanilla wafer crumbs. Pour in mixture and sprinkle more crumbs on top. Store in freezer for several days but it usually is all eaten long before that.
